Yellow Sheep
Yellow Sheep is a Double English Ginger IPA brewed with British Ale yeast, generous amounts of English hops, and dry hopped. Yellow Sheep will be a big beer at 8.3%ABV and 65 IBUs, and will contain a distinctive bold ginger character.
The first batch of Yellow Sheep is available for interested taste testers. The initial recipe was 79 IBUs (bitterness), and the bitter character was very distinct up front. The next batch will be reduced to 65 IBUs to allow the flavor and character of the beer to pop. Input from our taste testers have influenced the changes for the second batch.
The second batch will be brewed on March 26 and will be available on or about April 23.

I honestly enjoyed your beer. It has great potential!
At first, nose is quite floral; immediately thought Pale Ale/IPA
Aftertaste was a bit bitter (you hit it on the head with the "first three sips ... and then you're good to go!")
Nice carbonation - actually quite impressed. Almost reminded me of a handpump, but maybe because I enjoyed your beer at "garage" temp ;)
Sweet, malty flavor with an herbal-tea-like mouthfeel and smell

Much smoother than the first sips, but back to the sweet, "stingy" bite
I tasted the ginger! Very, very light. If I didn't know it was present, I probably wouldn't have been able to put my finger on it; but very, very nice
A really unique "experience" because this is one of the first beers I've tasted that after you swirl it's as if it's a whole new beer again. Does that make sense? In one bottle, I captured two totally different flavors. At first the combination is a bit "stingy" (first word that came to mind) but then the flavors really pull through. Have you thought about using chamomile? Ginger/chamomile might be a very interesting experiment...
